Hennessy - Very Special Fish & Chips!!
When Mark Petrou lifted the crown from Seafish of UK Fish and Chip Shop of the Year a couple of years ago, He had just 2 things on his mind, one was the imminent arrival of his daughter Imogen and the second was finding and opening the next shop!
Mark already knew that it took hard work and commitment to get to the top but felt that he could achieve more, 'it would have been easy to rest on my laurels' Mark said 'but I have a fantastic team of staff who are so comfortable with the range at Chatteris, that I felt more than able to look ahead to more sites. I am not afraid of hard work and relish the challenge of what's around the next corner'.
Some months later, after Imogens safe arrival, Mark had viewed a number of prospective sites but none had met his requirements until he found Hennessy's in Ely. Just 12 miles from his site in Chatteris The shop has been a chippy for over 75 years, it was in a great location in the
Robert had worked with Mark when Florigo installed the range at their award winning shop in Chatteris and he knew that Florigo would deliver exactly what they promised - a bespoke, hand crafted frying range that had proven reliability and backed up by their own nationwide service department.
'Mark definitely has a talent' says Robert Furey, 'he knows how to market a business, produce good quality food and create a team that works together, not only that... he helps and advises other friers too, he goes that extra mile and his enthusiasm and passion for the industry is second to none'.
Mark and Robert worked together to create a range design that would work in the new shop, a wall range fitted exactly within the available space and was complimented with High Efficiency pans (all equipped with the next generation of full colour touch screens), an integral scrap box, a 500mm chip box (built larger to cope with extra demand) and of course integral filtration and separate return pipes - the bespoke 'L' shaped counter had an integral Bain Marie, space underneath for a cool unit and fridge and a frosted glass privacy panel.
The range was installed in February 2008 and since then the shop has gone from strength to strength with a noticeable increase in trade, Mark now divides his time between the 2 shops and it is to his credit that both were voted in the top 5 shops from the region for Fish & Chip shop of the year with his Chatteris site just nudging Ely out of the competition and going on to make to the national final for the third time.
Mark said: "Getting to this stage of the competition recognises the hard work we've put in over the years. We deliver the best fish and chips time after time and it's great for our customers to know that they are getting the best in the area. We'll be doing all we can to make sure we promote the whole industry in the best possible light."
