Florigo’s first Kosher Fish Shop

Florigo’s first foray into fitting a kosher fish shop has proved to be a roaring success with White Fish in North West London.  Cooking high quality kosher food in Florigo’s high quality frying range has shown to be a winning formula.

The owner, Jacques Marciano, took on a challenge with not only taking his first step into the catering world but also with opening a kosher fish and chip restaurant.  To become a certified kosher establishment all food preparation has to follow rigorous processes; all fish served to his customers must have fins and every single piece must have at least a small piece of skin left on so a specialist rabbi can check that it has easily detached scales. 

It is not just the fish that has to be checked: the same rabbi also checks that every single product used in the restaurant is kosher, from frying oils to tomato ketchup and even wine.  The rabbi knows which products are suitable by researching into each ingredient and food additive of each product and ensuring that it does not derive from a non kosher source.  The rabbi will then pass the information onto Jacques so Jacques knows exactly what he can serve to his customers.

In a business with a high end finish and where meticulous attention to detail is vital, choosing a quality frying range was a key component.  Jacques says ‘I am very pleased with the outcome and the quality of food and the Florigo range is definitely delivering as promised.  The efficiency is very good and it’s very sleek which makes it easy to clean.  The staff also find it easy to use especially with the built in filtration.’
